1.5 pounds chicken breasts or thighs, sliced into strips
2 large heads romaine lettuce, cut into quarters
2 hard-boiled eggs, crumbled
2 tablespoons capers, drained
1 (6-ounce) package shredded parmesan cheesee
1 (5-ounce) package garlic croutons, crushed
½ cup creamy Caesar dressing
Salt and pepper, to taste
Vegetable oil, for the griddle
Preheat Blackstone griddle to medium-high heat. Drizzle vegetable oil then throw down the chicken. Season with salt and pepper. Cook the chicken for 6-8 minutes until completely cooked through. Remove from the griddle and set on a paper towel-lined plate.
Lay the romaine quarters directly onto the griddle, cut side down. Sear for 1 minute per side then remove from the griddle.
Lay the seared romaine out onto a large serving platter. Top with Caesar dressing, chicken, croutons, parmesan cheese, capers, and the crumbled hard-boiled egg. Serve immediately.
