Ingredients
- 1 (24-ounce) package elbow macaroni, cooked
- 1 (10-ounce) package grape tomatoes
- 1 red bell pepper, diced
- 1 (13.5-ounce) can spinach (squeeze out any excess liquid)
- 1 (6.5-ounce) jar basil pesto sauce
- Salt and pepper, to taste
- 1 cup heavy cream
- 1 (16-ounce) package shredded mozzarella
- Vegetable oil, for the griddle
Directions
- Preheat Blackstone griddle to medium heat. Drizzle vegetable oil then add the diced pepper, tomatoes, and spinach. Season with salt and pepper. Cook the vegetables on the griddle top for 3-4 minutes until the tomatoes are lightly blistered.
- Add the cooked pasta to the griddle. Use spatulas to mix the pasta with the vegetables until they are evenly mixed.
- Pour the pesto, heavy cream, and shredded cheese over the pasta. Mix with spatulas until a thick, cheesy sauce is formed. Remove from the griddle and serve immediately.
