Ingredients

  • 1 (24-ounce) package elbow macaroni, cooked
  • 1 (10-ounce) package grape tomatoes
  • 1 red bell pepper, diced
  • 1 (13.5-ounce) can spinach (squeeze out any excess liquid)
  • 1 (6.5-ounce) jar basil pesto sauce
  • Salt and pepper, to taste
  • 1 cup heavy cream
  • 1 (16-ounce) package shredded mozzarella
  • Vegetable oil, for the griddle

Directions

  1. Preheat Blackstone griddle to medium heat. Drizzle vegetable oil then add the diced pepper, tomatoes, and spinach. Season with salt and pepper. Cook the vegetables on the griddle top for 3-4 minutes until the tomatoes are lightly blistered.
  2. Add the cooked pasta to the griddle. Use spatulas to mix the pasta with the vegetables until they are evenly mixed.
  3. Pour the pesto, heavy cream, and shredded cheese over the pasta. Mix with spatulas until a thick, cheesy sauce is formed. Remove from the griddle and serve immediately.
