These Stuffed Peppers are a flavorful and budget-friendly meal. Filled with seasoned ground beef, rice, corn, and green chiles, and topped with enchilada sauce and melted cheese, they’re a delicious and satisfying way to feed four for just $20.

Ingredients
- 1 pound 80/20 ground beef
- 1 (4-ounce) can diced green chiles
- 10 ounces frozen corn
- 2 cups cooked white rice
- 4 green bell peppers, halved and deseeded
- 1 (10-ounce) can red enchilada sauce
- 8 ounces fiesta blend cheese
- 1/2 bunch cilantro, roughly chopped
- 2 tablespoons fajita seasoning
- Vegetable oil, for the griddle
- Salt and pepper, to taste
Directions
Preheat Blackstone griddle to medium heat. Drizzle vegetable oil then lay out the bell peppers cut-side down. On the other side of the griddle, add the ground beef and season with 1 tablespoon of fajita seasoning, salt, and pepper.
Cook the beef completely then add the rice, corn, green chiles, and cilantro. Add the remaining fajita seasoning, mix with spatulas, and cook for an additional 3 minutes.
Pour 3/4ths of the enchilada sauce over the mix and stir for 1 minute. Flip the bell peppers then evenly divide the beef and rice mix between the 8 halves. Top the stuffed peppers with the remaining enchilada sauce and cover with shredded cheese.
Cover the stuffed peppers with the griddle hood or a basting dome and let cook for 5 minutes. Remove from the griddle and serve immediately.
