Ingredients

  • 6 cloves garlic, minced
  • 1 yellow onion, diced
  • 8 ounces brown mushrooms, sliced
  • 1 bunch kale, chopped
  • 1 acorn squash, sliced
  • 1 (12-ounce) box bowtie pasta, cooked
  • 1 (16-ounce) jar alfredo sauce
  • 6 ounces shredded parmesan cheese
  • Salt and pepper, to taste
  • Vegetable oil, for the griddle

Directions

  1. Preheat Blackstone griddle to medium heat. Drizzle olive oil then add the squash, onions, and mushrooms. Season to taste with salt and pepper. Cook the vegetables for 6-9 minutes until very tender. 
  2. Once the vegetables are tender, add the garlic. Cook for another minute until the garlic is fragrant. 
  3. Add the pasta, alfredo sauce, and chopped kale onto the griddle. Mix with spatulas until everything is heated through and the kale is wilted.
  4. Remove the pasta from the griddle then top with shredded parmesan. Serve immediately.
