Gourmet Bacon Cheeseburgers

Ingredients
- Cooking oil
- 8 slices thick-cut uncured bacon
- 2 pounds organic ground beef (85/15 or 80/20)

Blackstone SPG Seasoning (or salt, pepper, and garlic)
- 1 small onion, diced
- 4 gourmet brioche sesame seed burger buns
- 4 slices deli-cut Colby-Jack cheese
- 4 slices deli-cut Swiss cheese
- Mayonnaise
- 4 pieces organic green leaf lettuce
- Refrigerated pickle slices
- Ketchup
- Mustard
Directions
Preheat the Blackstone griddle to medium-low heat. Lightly drizzle oil onto the griddle and spread evenly.
- Place the bacon on the griddle and press it flat with a griddle press. Flip early and often until cooked to your desired crispness. Move bacon to the side of the griddle to keep warm.
Divide the ground beef into four 8-ounce portions and form into burger patties.
Increase the griddle heat to high.
Season one side of each patty with Blackstone SPG. Place the patties seasoned-side down on the griddle, then season the second side.
- Add the diced onions to a lightly oiled section of the griddle and cook, stirring occasionally, until softened and lightly caramelized.
- Flip the burgers once the first side is well seared.
- Spread mayonnaise on the cut sides of the buns.
Reduce the griddle heat to medium as the burgers finish cooking. When nearly done, top each burger with one slice of Colby-Jack cheese, one slice of Swiss cheese, and two slices of bacon. Add a small splash of water to the griddle and close the lid for about 1 minute to melt the cheese.
- Place the buns cut-side down on the griddle and toast until lightly golden.
- Assemble the burgers: place lettuce on the bottom bun, add the burger patty, pickles, ketchup, mustard, and the top bun.
- Serve immediately and enjoy!
