Directions
In a blender, combine all the ingredients for the creamy avocado sauce. Blend until smooth and creamy.
In a mixing bowl, combine the ground beef, chopped onion, and Blackstone Fajita seasoning. Mix well.
Take a street-size corn tortilla and spoon about 1 tbsp of the meat mixture onto one half. Spread it to create a thin layer. Repeat this process until all the meat is used.
Heat a drizzle of oil in a pan over medium-low to low heat. Place the tortillas in the pan with the meat side up. Allow them to heat for 20-30 seconds, then fold the tortillas in half. Fry the tortillas on low heat, adding more oil as needed. Flip them every couple of minutes until they become crispy and browned.
Remove the tacos from the pan and let them rest and drain on a cooling rack or paper towels. Fry the remaining tacos in batches, depending on the size of your cooking surface and the number of tacos you are making.
Serve the fried tacos with the creamy avocado sauce and your favorite taco toppings, such as cheese, cilantro, lettuce, salsa, etc. Enjoy!
