Preheat the griddle on high.
In a bowl, add all of your veggies, salt, oregano, 1/4 cup avocado oil, and 1/2 cup greek dressing and toss. Set aside on counter or keep chilled in fridge up to 12 hours.
Prepare chicken by adding avocado oil, greek dressing, salt, lemon juice, and oregano and toss with chicken. You can marinade the chicken up to 24 hours.
Add chicken to griddle top. Cook 5 minutes on each side until fully cooked.
On the other side of griddle on low, add down rice with some water to steam.
Build the bowl. In a bowl, add down your cooked rice, then slice your chicken or cube it on one side, and add the veggie mixture on the other side.
Lastly, add a large dollop of tzatziki sauce in the bowl and enjoy!
