Make the Greek Salad: Combine the tomatoes, cucumber, feta, and red onion in a large mixing bowl. Drizzle with olive oil and season with garlic sea salt, salt, and pepper. Set aside.
Prepare the Meat Filling: In a separate bowl, combine the ground lamb (or chicken) with the egg, bread crumbs, grated garlic, lemon zest, feta, parsley, mint, dill, and red onion. Season with salt and pepper. Mix by hand until well combined.
Assemble the Tacos: Spread a layer of the meat mixture evenly onto the tortillas. The amount will vary depending on the size of the tortillas and your preference for meat quantity.
Cook the Tacos: Heat a griddle to medium heat. Place the tortillas meat side down onto the griddle. Press them down to "smash" the meat into the tortilla. Cook for about 3 minutes, then flip and cook the tortilla side for an additional 2 minutes.
Serve: Fill the tacos with the Greek salad, tzatziki sauce, and, if using, Trader Joe’s Garlic Spread Dip. Enjoy!
