Green Chile Chorizo Breakfast Toaster Sandwich

Ingredients

2 pounds ground chorizo sausage
- Cooking oil, for griddle
- Flame-roasted green chile peppers
- Thick-cut Texas toast
- Mayonnaise
- 3 eggs
- Blackstone Essential Blend Seasoning (or salt, pepper, and garlic)
- Pepper jack cheese, sliced
- Smokehouse cheddar cheese, sliced
- Cilantro, diced
Directions
Preheat the Blackstone griddle to medium-high heat.
Shape the ground chorizo into 1/4 to 1/3 pound patties.
Lightly spread cooking oil on the griddle with a paper towel and place the patties on the griddle, pressing them down with spatulas to ensure a perfect sear, and flipping them once seared.
Place 3 Blackstone Egg Rings on the hot griddle and spray with oil to prevent sticking.
Crack one egg into each egg ring and season with Blackstone's Essential Blend Seasoning or a mix of salt, pepper, and garlic.
Once the patties are cooked, place one slice of pepper jack cheese and one slice of smokehouse cheddar cheese on each patty, then add pieces of green chile peppers on top.
Spread mayonnaise on one side of each Texas toast slice.
Place the toast slices mayo side down on the griddle. Once nicely browned, flip each piece to warm the other side, then remove from the griddle.
Remove the egg rings and pull the eggs off the griddle while the yolks are still runny, or to your preference. Season with Essential Blend or salt, pepper, and garlic.
Spread mayonnaise on the inside of the bottom slice of each piece of toast.
Place one patty on each bottom slice of bread, add cilantro on top of the patties, and top with the remaining slices of toast, mayo-griddled sides facing out.
