Green Chile Hash Breakfast Skillet

Ingredients
- 1 cup sweet potato, peeled and diced
- 1 cup red or white potato, peeled and diced
- Cooking oil (for the griddle)
- 1/2 cup onion, diced
- 4-5 slices of thick bacon, chopped into small pieces
- Salt (to taste)
- Black pepper (to taste)
- 1/4 to 1/2 cup roasted green chiles, diced
- 1/2 cup Mexican cheese blend, shredded
- 2 eggs
- 2 small flour tortillas
- Fresh cilantro, chopped (for garnish)
- Sriracha sauce (to taste)
Directions
Preheat your Blackstone griddle to medium-high heat.
Drizzle the griddle with oil and add the diced sweet potatoes and red or white potatoes. Cook until they are about halfway done.
Stir in the diced onion and chopped bacon. Continue cooking until the potatoes are tender and the bacon is crispy.
Once cooked, season the mixture with salt and black pepper to taste. Then, add the diced roasted green chiles and stir until heated through.
Move the hash to one side of the griddle, reduce the heat, and sprinkle the Mexican cheese blend over the top of the hash.
Crack two eggs onto the griddle next to the hash. Season with salt and pepper (or your favorite southwestern seasoning). Cook until the eggs reach your desired doneness, then remove.
Warm the flour tortillas on the griddle.
Plate the hash, eggs, and tortillas. Drizzle sriracha sauce over the eggs and sprinkle with chopped cilantro.
Serve hot and enjoy your delicious breakfast skillet!
