Ingredients
- 2 cups flour
- ¼ cup sugar
- ½ tsp salt
- 1 tbsp baking powder
- 2 eggs
- 1 cup whole milk
- ½ tsp vanilla extract
- Oil for frying
- Powdered sugar for dusting
Directions
In a large mixing bowl, combine the flour, sugar, salt, and baking powder. Add the eggs, milk, and vanilla extract, then whisk together to form a thick batter that can easily drizzle. Let the batter sit while you preheat your Blackstone griddle to medium heat.
Add enough oil to the griddle to cover the size of a funnel cake. Using a spoon, ladle, or funnel, drizzle the batter in swirling patterns. Cook until golden brown, about 3-4 minutes, adding more oil as needed. Flip and cook the other side until golden brown, adding oil as needed.
Transfer the funnel cakes to a plate lined with paper towels or parchment paper. Dust with powdered sugar and enjoy!
