Griddled Pineapple and Ice Cream

Serves 4 Time: 15 minutes Difficulty: Easy

Ingredients

  • 1 (20-ounce) can pineapple slices, drained or 1 fresh pineapple, sliced and cored
  • ½ cup brown sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons honey
  • 3 tablespoons dark rum or 1 ½ teaspoons rum extract
  • ¼ cup unsalted butter
  • Vanilla ice cream, for serving

Directions

  1. Preheat Blackstone griddle to low heat.
  2. In a large bowl combine brown sugar, lemon juice, rum, and honey in a bowl until smooth. Add pineapple rings to the bowl and spread mixture on both sides of each pineapple ring.
  3. Melt the butter on the griddle.
  4. Place pineapple rings on the griddle for 3-5 minutes, turning once until sugar mixture melts and pineapple is heated and tender.
  5. Pour the remaining sugar mixture over pineapple rings, let it reduce. Keep the heat low and the sauce moving with spatulas to avoiding burning the sugar.
  6. Turn the griddle off and remove pineapple slices from the heat. Serve with scoop of ice cream and drizzle the sauce over the top.
