Directions
Preheat your Blackstone to medium-low. Set out 6 slices of sourdough bread (or any bread of your choice). Dice up half a yellow onion. Cook the onion on your Blackstone in a little olive oil (or oil of your choice), seasoned with salt and pepper. Cook until caramelized (about 3-4 minutes) and remove from the heat to assemble your sandwiches.
For Caprese Grilled Cheese, on one side of your bread, spread some pesto and add sliced tomato, shredded mozzarella, and balsamic glaze to your preference. Add more shredded cheese and pesto to the other slice of bread. Place that bread on top of the shredded mozzarella, pesto side down, and set aside to cook.
For Pizza Grilled Cheese, on one side of your bread, add pizza sauce (or marinara sauce), shredded mozzarella, sliced pepperoni, Blackstone Tuscan Herb Seasoning, and fresh basil. Add more shredded mozzarella and pizza sauce to the other slice of bread. Place the other slice of bread on top of the cheese sauce side down and set aside to cook.
For Frito Bandito Grilled Cheese, on one side of your bread, spread TD's New and BBQ sauce (or BBQ sauce of choice), sliced sharp cheddar cheese, caramelized onion, a handful of crushed chili cheese Fritos, and more sliced cheddar cheese. Drizzle some BBQ sauce on the other side of the bread. Place the other slice of bread sauce side down on top of the cheese and set aside to cook.
To cook, add a small amount of oil or butter to your Blackstone. Place your sandwiches on the griddle top and cook 2-3 minutes per side, flipping often to melt the cheese. Slice in half, serve with extra sauce if you like, and enjoy!
