Preheat E-Series Airfryer oven to 400.
Roll out puff pastry to stretch slightly. Cut into four rectangles. Spread mayo on two of the rectangles and Dijon mustard on the other two leaving room around the edges.
Layer each half with cheese and ham then top with the remaining puff pastry. Seal edges with a fork.
Whisk one egg and 1 tablespoon of water then brush each puff pastry with the egg wash. Top with everything bagel seasoning and pierce to vent the top.
Bake for 12 minutes or until golden brown.
