Ingredients
- 1 package Simply Potatoes Shredded Hashbrowns
- 1 can cream of mushroom soup
- 1 pint sour cream
- 2 cups cheddar cheese (or Colby jack)
- 1 teaspoon salt
- ¼ teaspoon pepper
- 1 lb bacon
- 1 lb sausage
- 6-8 Eggs
- 1 tablespoon butter

Directions
Preheat the Blackstone on low and begin cooking the bacon and sausage.
For the Hashbrown Casserole Cakes, combine all the ingredients in a bowl, ensuring they are well mixed.
Use some of the bacon grease on one side of the griddle to fry the Hashbrown Casserole Cakes.
Spoon the casserole cakes onto the griddle and fry for 3-4 minutes. Flip and continue cooking on the other side until they are golden brown and cooked through.
Fry the eggs on low heat with butter. Break the clear membrane around the yolk to ensure they are fully cooked.
Remove all items from the griddle, serve, and enjoy!
