In a large mixing bowl, combine the ground chicken, grated Parmesan, chopped parsley, and Blackstone Bootleg Burger Seasoning to taste. Mix until evenly combined.
Heat your Blackstone griddle to high and add a small amount of olive oil.
Divide the chicken mixture into 2-3 oz. portions and shape each portion into a meatball. Place each meatball onto the hot griddle, then flatten thinly using a burger smasher and a piece of parchment paper.
In a small bowl, mix together the honey, hot sauce, and red pepper flakes until well blended.
Toast the ciabatta buns on the griddle until golden. Flip the chicken patties once browned, and spoon some hot honey sauce over the cooked side of each patty. Place a slice of Colby Jack cheese on top.
Spread a drizzle of ranch dressing on the bottom half of each toasted bun. Add a layer of lettuce, then double stack the chicken patties on top. Finish with tomato, red onion, an additional drizzle of ranch dressing, and more hot honey sauce if desired. Place the top bun and serve hot.
