Preheat your Blackstone Griddle to medium (about 350°F) and drizzle on 1 tablespoon of olive oil.
Add the sliced bell peppers and onions to the griddle. Cook, stirring occasionally, until they soften and begin to caramelize, about 5–7 minutes.
Season the peppers and onions with half the salt, black pepper, garlic powder, and onion powder.
Add the sliced garlic and cherry tomatoes. Cook until the tomatoes start to blister and the garlic becomes golden and fragrant, about 2–3 minutes. Push the vegetables to one side of the griddle.
Slice the hot dogs into ½-inch coins. Drizzle the remaining tablespoon of olive oil onto the empty side of the griddle and add the hot dogs. Season with the remaining salt, pepper, garlic powder, and onion powder. Cook until browned and crispy on the edges, about 3–5 minutes.
