Jalapeno Cheese Crisps

Serves 4 Time: 20 minutes Difficulty: Intermediate


  • 1 (24-ounce) package shredded cheddar cheese
  • 3 fresh jalapenos, thinly sliced
  • 1 pound bacon, cooked and crumbled
  • Onion powder, to taste


  1. Heat Blackstone griddle to medium heat, check that cooking surface is completely clean of any excess oil.
  2. Place shredded cheese directly on the griddle in ¼ cup increments.
  3. Once the cheese starts to melt, evenly distribute the bacon and jalapenos onto the cheese crisps.
  4. Lightly dust the nachos with onion powder.
  5. After about 1-2 minutes, the cheese will crisp up and become lacey. At that point, use a spatula to carefully lift the cheese and flip.
  6. Cook for 1 more minute, or until cheese is crispy and golden brown. Set on paper towels to drain excess oil.
  7. Serve with desired toppings such as sour cream, salsa, guacamole and chopped cilantro.
