Ingredients
- 1 pound ground pork
- 3 green onions, thinly sliced
- 1 tablespoon soy sauce
- 2 teaspoons sesame oil
- 1 tablespoon garlic paste
- 2 teaspoons ginger paste
- 1 teaspoon white pepper
- 20 to 24 wonton wrappers
- 1 tablespoon avocado oil
- 1/2 cup water, for steaming
- Chili oil, for garnish
- Sliced green onions, for garnish
- 1/4 cup soy sauce
- 1 tablespoon rice wine vinegar
- 1 teaspoon sesame oil
- 1 teaspoon chili oil
- 1 teaspoon sesame seeds
- 1 tablespoon sliced green onions
- 1 teaspoon sugar or honey
- Pinch of white pepper

Directions
- In a large bowl, combine the ground pork, green onions, soy sauce, sesame oil, garlic paste, ginger paste, and white pepper. Mix until just combined, being careful not to overwork the meat.
- Divide the mixture into 20 to 24 equal portions and roll each into a meatball.
- In a small bowl, whisk together all of the dipping sauce ingredients. Set aside while the dumplings cook.
- Preheat the Blackstone Griddle on low heat for 5 to 10 minutes. Lightly oil the cooking surface with the avocado oil.
- Place the meatballs on the griddle and cook for about 3 minutes.
- Flip each meatball, then place a wonton wrapper over the top of each one. Pour the water around the dumplings and immediately cover with a melting dome.
- Steam for 7 minutes. If the water evaporates before the dumplings are fully cooked, add a little more water and continue steaming for another 3 to 4 minutes, or until the pork reaches an internal temperature of 160°F.
- The wrappers should be tender with lightly crisped bottoms. Garnish with sliced green onions and a drizzle of chili oil, then serve immediately with the dipping sauce.
