Mix the ingredients for the cranberry spread and refrigerate until ready to use.
On low heat, slowly cook the chopped bacon to render out the fat (refer to the video). Adjust the heat to medium and allow the bacon to crisp. Remove the bacon once done, leaving behind the rendered-out bacon fat.
Add the leftover turkey or chicken to the bacon grease, tossing to coat. Allow the meat to reheat, separating it into two piles for two sandwiches.
Place the brie cheese on top of the meat and allow it to melt while adding half of the bacon on top of each pile of meat and cheese.
Assemble the sandwiches, baking or toasting the bread as desired on the Blackstone air fryer or griddle to achieve a toasty texture.
Schmear cranberry spread on the bread, then layer each sandwich with arugula, followed by the reheated meat, melted cheese, and crispy bacon.
