Lemon Garlic Broccoli Rabe

Ingredients:
- ½ stick unsalted butter
- 6-8 cloves fresh garlic, smashed
- 4-5 sprigs fresh thyme
- 1 whole lemon
- (optional) pinch of red pepper flakes
- 2 lbs. Broccoli Rabe or Broccolini, cleaned and trimmed
- Pinot grigio (or any white wine you like)
- ¼ cup sliced almonds
- Salt & Pepper
Directions:
- Heat your Blackstone to medium-high heat. Using a small sauce pot, add the butter, garlic, thyme and 1/3 of the lemon. (The lemon peel will add a ton of flavor) Cook for 4-5 minutes before moving onto the next step.
- Add a bit of olive oil to the other side of the griddle and then the broccoli rabe. Add a pinch of salt and pepper and toss to evenly coat. Cover with a dome and cook for 3 minutes. Add a few tablespoons of white wine, toss and cover. Cook for another 2-3 minutes.
- Add a few tablespoons of the flavored butter over the broccoli rabe and toss to evenly coat.
- Just before the broccoli rabe is finished, add the juice of the remaining lemon, the sliced almonds and toss to evenly incorporate.
- To plate, add all of the broccoli rabe to a serving bowl and garnish with the remaining butter, garlic and toasted herbs. Serve hot.
