1/2 medium onion, diced
1–2 cups shredded cheese
1–2 teaspoons Cajun seasoning
2 green onions, thinly sliced
Heat a large flat-top grill, griddle, or skillet over medium heat. Drizzle with olive oil.
Spread the frozen tater tots in a single layer. Cook them frozen to avoid sogginess. Let them crisp on one side, then gently flip after about 10–15 minutes, being careful not to break them.
While tots cook, dice the Andouille sausage into small chunks. Sauté in a separate pan or on an unused portion of the grill until browned.
In the same pan, add a little more oil and sauté the diced onion, celery, and bell pepper—the Cajun Holy Trinity—until soft and fragrant.
Combine the cooked sausage and vegetables with the tater tots in a large skillet or foil pan. Season with Cajun seasoning to taste.
Sprinkle cheese evenly over the mixture. Let it melt fully, covering with a lid or tenting with foil if needed.
Top with sliced green onions and drizzle hot sauce to taste. Serve hot and enjoy!
