In a bowl, combine diced mango, red onion, jalapeño, chopped cilantro, lime juice, and salt. Mix well, then refrigerate until ready to use.
Heat your Blackstone griddle to medium.
Slice the loaf into pieces about 1½ inches thick. Cut each piece about halfway down the center to create a pocket for the sausage.
In a small bowl, mix mayonnaise with sriracha and a pinch of salt. Spread this mixture on the outsides of the bread pieces.
Drizzle a little oil on the griddle. Place the sausages on the hot surface and season with Citrus Garlic Mojo seasoning. Cook, turning often with tongs, until evenly browned on all sides.
Place the prepared bread on the griddle. Toast until golden brown on one side, then flip and toast the other side. Remove when both sides are lightly crisped.
Place one sausage into each toasted bun. Top with a generous spoonful of mango salsa, a sprinkle of crispy fried onions, and a drizzle of sriracha mayo.
