  • 1 cup breadcrumbs
  • 1/2 cup whole milk
  • 2 large eggs
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped bell pepper(any color)
  • 2 cloves garlic, minced
  • 1/4 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Wood pellets(hickory or oak for a robust smoky flavor)

Instructions

  1. Preheat the Pellet Smoker:
    • Preheat your pellet smoker to 225°F (107°C) using wood pellets, such as hickory or oak, for a robust smoky flavor.
  2. Prepare the Meatloaf Mixture:
    • In a large mixing bowl, combine ground beef, breadcrumbs, whole milk, eggs, chopped onion, chopped bell pepper, minced garlic, ketchup, Worcestershire sauce, Dijon mustard, dried thyme, dried oregano, smoked paprika, salt, and black pepper.
  3. Mix Thoroughly:
    • Use your hands or a spatula to mix the ingredients thoroughly, ensuring an even distribution of flavors and ingredients.
  4. Shape the Meatloaf:
    • Form the meat mixture into a loaf shape and place it on a parchment paper-lined tray or directly on the smoker grates.
  5. Smoke the Meatloaf:
    • Place the meatloaf on the preheated smoker grates and smoke at 225°F for approximately 2 to 2.5 hours. The internal temperature should reach 160°F (71°C).
  6. Baste (Optional):
    • If desired, you can baste the meatloaf with additional ketchup or a glaze of your choice during the last 30 minutes of smoking.
  7. Check for Doneness:
    • Ensure the meatloaf reaches a safe internal temperature and has a beautiful smoky crust on the outside.
  8. Rest the Meatloaf:
    • Once done, remove the smoked meatloaf from the pellet smoker and let it rest for about 10 minutes. This allows the juices to redistribute, keeping the meatloaf moist.
  9. Slice and Serve:
    • Slice the smoked meatloaf into thick portions and serve hot. Pair it with your favorite sides, such as mashed potatoes, roasted vegetables, or a fresh salad.
  10. Enjoy the Smoky Goodness:
    • Enjoy your homemade meatloaf's rich, smoky flavor straight from the Blackstone Pellet Grill. The infusion of smokiness adds a delightful twist to this classic comfort food.
