Heat to high.
In a large bowl, combine sausage, beef, onions, peppers, tomato sauce, garlic, salt, pepper, eggs, and crushed crackers. Mix gently—avoid overmixing to prevent dryness.
Use the bottom tray from the slider rolls as a mold. Press the mixture evenly into the tray to form a square, making it easier to transfer to the griddle.
Slice the Hawaiian rolls in half horizontally.
Drizzle avocado oil on the griddle and spread evenly. Place the molded meat mixture onto the griddle. Cook 3–4 minutes until crispy, then flip and cook another 3–4 minutes, or until fully cooked through.
In a small bowl, mix ketchup, mustard, and brown sugar. Brush generously onto the top of the meatloaf, then baste the other side after flipping.
On a cooler part of the griddle (low heat), drizzle oil, spread evenly, and place the cut rolls face-down. Toast to your liking.
Spread any leftover sauce on the bottom buns. Place cheese slices on top of the cooked meatloaf and cover with a lid or dome to melt.
Transfer the meatloaf square onto the bottom buns. Place the top buns over the meat and cut into individual sliders.
