1 bag mini golden potatoes
½ stick butter
1 tsp seasoning (use your favorite seasoning here!)
Chives, chopped
Parmesan cheese, shredded
1 tbsp olive oil
Preheat Leggero pizza oven to 350˚. While it’s preheating, add ½ stick butter into a grease cup liner (or any small oven-safe dish) and add 1 tsp of your favorite seasoning. Place the butter and seasoning in the pizza oven and allow the butter to melt.
Rinse the mini potatoes off. Using a knife, cut slits into the potatoes making sure to not cut all the way through (use chopsticks on either side of the potato if needed to help stabilize the potato).
Add the potatoes to a baking dish. Pour the melted butter over the potatoes and add 1 tbsp olive oil.
Bake in the pizza oven for 20-25 minutes (or until the potatoes are golden and crispy).
Once golden and crispy, garnish with chopped chives and shredded parmesan cheese.
