Monterey Chicken Pizza combines the robust flavors of BBQ-seasoned chicken thighs and crispy bacon on a bed of pizza dough slathered with BBQ sauce. Topped with a blend of mozzarella and cheddar cheese, it's baked to golden perfection. Fresh cherry tomatoes and green onions add a burst of freshness, making this pizza a hearty and flavorful choice for any meal.

Ingredients
- 4 strips thick-cut bacon
- 4 boneless, skinless chicken thighs
- BBQ seasoning
- Cherry tomatoes, diced
- Green onions
- 1 large homemade or store-bought pizza dough
- 1 cup favorite BBQ sauce
- 1 1/2 cups low-moisture mozzarella cheese
- 1 cup shredded mild cheddar cheese
Directions
Preheat a Blackstone griddle to medium heat.
Season the chicken thighs with BBQ seasoning.
Cook the bacon and chicken on the griddle until the chicken reaches an internal temperature of 175°F and the bacon is cooked. Remove from heat and let them cool.
Quarter the cherry tomatoes and chop the green onions.
Dice the cooked chicken and chop the bacon.
Preheat the Blackstone Pizza Oven to 550°F.
Stretch out the pizza dough to roughly 14-16 inches in diameter.
Spread the BBQ sauce evenly over the dough, followed by a layer of mozzarella cheese.
Top with diced chicken and chopped bacon. Lightly dust with more BBQ seasoning and sprinkle with shredded cheddar cheese.
Place the pizza in the pizza oven for about two minutes or until the crust is golden brown and the cheese is melted and bubbly.
Remove the pizza from the pizza oven and top with diced cherry tomatoes and chopped green onions.
Slice the pizza and enjoy your Monterey Chicken Pizza!
