Moose Smashburger with a Partridge Berry Chutney

Amy’s Winning Great Griddle Off Recipe:

Cook time: 25 mins
Serves 2-4

Partridge Chutney Ingredients:

  • 1 cup partridge berries
  • 1 cup green or Koru apple, diced
  • 1 cup yellow onion, finely chopped
  • ½ cup light or dark brown sugar
  • ½ cup apple cider vinegar
  • 1 tbsp fresh ginger, grated
  • 1 tsp mustard seeds
  • ½ tsp ground allspice
  • ¼ tsp cinnamon
  • Pinch of salt
  • 1-2 tsp oil (for the griddle)
  • Optional: 1 small hot chili pepper, minced (for a kick)

Partridge Chutney Directions:

  1. Preheat Blackstone griddle to medium heat.
  2. Add oil and cook mustard seeds for 30–60 seconds until fragrant.
  3. Sauté onions and ginger until softened (about 5 minutes).
  4. Add apples, berries, sugar, vinegar, spices, and salt. Reduce heat to low and cover with a bowl. Check and stir often until thickened (about 5-6 minutes).
  5. Cool chutney, keep in a container in the fridge (store for up to 3 weeks).

Moose Patty Ingredients:

  • 1/2 cup bacon, thinly sliced
  • 1lb of ground moose
  • 1 small yellow onion, grated with juice
  • 1/2 cup of breadcrumbs, soaked in half & half
  • salt and pepper to taste
  • sharp cheddar, sliced

Patty Cooking Instructions:

  1. Combine ground moose, small yellow onion, breadcrumbs, salt and pepper to form equal sized moose patty balls. Cool in the refrigerator for 30 minutes before cooking.
  2. Preheat Blackstone griddle to medium heat.
  3. Cook bacon on medium heat until crispy and set aside.
  4. With the Blackstone on low, place moose patties down and smash (Use parchment paper and a spatula or burger press).
  5. Cook patties for 3-4 minutes, flip, and add sharp cheddar cheese slice.
  6. Cover patties and let cheese melt for 3 minutes.
  7. Set cooked patties aside, add 3 slices of bacon and top with another patty.
  8. Toast your bun of choice on medium heat for a couple minutes until golden brown.

Burger Assembly:

  1. Spread mayo (Amy prefers a caramelized onion mayo) to the toasted bottom bun, top with moose patties with bacon, and spoon chutney over the cheese before finishing with the top bun.
  2. Eat and enjoy!
