Moroccan Kefta Kabab

Ingredients
- 1 lb ground chuck (can use half lamb and half ground beef, if desired)
- 1/4 cup diced white onion
- 1/4 cup chopped cilantro
- 1/4 cup chopped parsley
- 2 teaspoons smoked paprika (or regular paprika)
- 1 teaspoon kosher salt
- 1 teaspoon cinnamon
- 1/4 teaspoon ground black pepper
- Wooden skewers
Directions
In a mixing bowl, combine the ground chuck, diced onion, cilantro, parsley, smoked paprika, kosher salt, cinnamon, and black pepper. Mix well, similarly to a meatloaf.
Let the mixture sit for at least 5 minutes to allow the seasonings to bloom.
Take about 1/4 pound of the mixture and form it around a wooden skewer.
Preheat a Blackstone griddle and place the kebabs on the griddle.
Cook the kebabs for 2-3 minutes on each side, turning about 4 times until the meat is cooked to your liking.
Serve with tzatziki sauce and warm pita bread.
