Oklahoma Fried Onion Burger

Directions

1. Preheat your Blackstone griddle to high heat.

2. Thinly slice the onions using a knife or mandolin and set aside.

3. Divide the ground beef into 8 equal portions (about 80g each). Keep them loosely formed and avoid overworking the meat.

4. Lightly oil the griddle. Place the beef portions onto the hot surface and let them sit for 10–15 seconds.

5. Season with salt, then pile a generous amount of sliced onions on top of each portion.

6. Smash the beef and onions together using a spatula or burger press. Cook for about 1 minute, then flip.

7. Cook until the onions are deeply browned and the patties develop a good crust, being careful not to burn them.

8. Season again lightly with salt and add a slice of cheese to each patty.

9. Toast the buns if desired.

10. Stack two patties per burger. Place them onto the top bun, then set the bottom bun on top.

11. Add a small splash of water to the griddle and cover with a lid or cloche to steam the buns for about a minute.

12. Once heated through, flip the burger so the bottom bun is underneath and remove from the griddle.

13. Serve with pickles and mustard.
