Preheat your griddle on low and add avocado oil for frying.
In a bowl, whisk together all the batter ingredients (egg, buttermilk, self-rising flour, cornmeal, paprika, cayenne pepper, onion powder, garlic powder, salt, and pepper).
In a separate bowl, combine all the sauce ingredients (mayonnaise, horseradish sauce, buttermilk, garlic powder, onion powder, cayenne pepper, paprika, ketchup, and honey or sugar). Mix well and set aside.
Using a mandolin, slice the onions thinly.
Add the sliced onions to the batter and mix to coat evenly. Form small piles of the battered onions and carefully place them into the hot oil on the griddle. Cook until golden brown and crispy.
Once cooked, transfer the fried onions to a wire rack to cool and drain excess oil. Sprinkle with salt while still warm.
Serve the crispy onions with the dipping sauce and enjoy!
