Peach Bourbon Cocktail



  • 2 Peaches, Sliced
  • 8 Oz. of Thyme Simple Syrup
  • 8 Oz. of Bourbon
  • Ginger Ale


  1. In a plastic container, add equal parts water and sugar, as well as a sprig of fresh thyme. Seal the container and shake well until sugar is dissolved.

  2. Set griddle to high heat. Slice two peaches into wedges and dry off with a paper towel, then place on the griddle. Cook for about 90 seconds, or until they are caramelized and golden.

  3. In a cocktail shaker, add two peach wedges. Using a muddle, push and turn 5-6 times to break up the peach. Add ice, 2 ounces of thyme simple syrup, and 2 ounces of bourbon and shake well.

  4. In a high ball glass, add some ice and strain the cocktail. Top it off with some ginger ale and garnish with a fresh peach wedge and fresh thyme.
