Ingredients
- 5–6 ripe peaches, sliced
- ¼ cup all-purpose flour
- ½ cup granulated sugar
- ⅛ tsp coarse sea salt
- Juice of 1 lemon
- ½ tsp vanilla extract
- ½ cup packed brown sugar
- ½ cup all-purpose flour
- 1 tsp ground cinnamon
- ¼ tsp coarse sea salt
- ⅔ cup old-fashioned rolled oats
- 1 stick (½ cup) cold unsalted butter, cubed

Directions
- Preheat your pizza oven to the lowest heat setting.
- In a large bowl, mix together the peaches, flour, sugar, salt, lemon juice, and vanilla. Transfer the filling to a greased cast iron dish and bake for 15–20 minutes, until the peaches begin to soften and bubble.
- While the peaches are baking, prepare the crumble topping. Combine the brown sugar, flour, cinnamon, salt, oats, and cold butter in a medium bowl. Use a pastry blender or fork to cut the butter into the mixture until coarse crumbs form.
- Remove the peaches from the oven and sprinkle the crumble topping evenly over the fruit. Return the dish to the oven and bake for another 5–10 minutes, until the topping turns golden brown and crisp.
- Let the crumble cool slightly before serving. Enjoy warm with a scoop of vanilla bean ice cream.
