Preheat your Blackstone griddle to medium-high heat.
Add a small amount of oil to one side of the griddle. Add the sliced onion and cook slowly, stirring occasionally, until softened and lightly caramelized.
Divide the beef into 8 loose, equal-sized balls. Be careful not to overwork the meat.
Place the beef balls on the hot griddle and let them cook for 10–15 seconds. Season with salt and black pepper, then smash firmly into thin patties.
Cook for about 90 seconds, or until a deep crust forms and the edges become crispy.
Flip the patties and top each with a slice of burger cheese. Continue cooking until the cheese is melted and the beef is cooked through.
Warm the nacho cheese sauce in a small griddle-safe pan or dish.
Place the burger buns cut-side down on the griddle and lightly toast until golden.
Build each burger with two stacked cheeseburger patties, caramelized onions, warm nacho cheese sauce, pickle slices, and crispy fried onions.
Add the top bun, gently press everything together, and serve immediately.
