Divide the ground beef into four loosely packed balls. Spread mayonnaise on the cut sides of each bun.
Preheat the griddle, setting one side to medium heat and the other to high heat. Add the jalapeño and onion to the medium-heat side with the oil. Season with salt and pepper, and cook until softened to your liking.
Place the beef balls on the high-heat side. Using a burger smasher (with parchment paper if desired), press each ball down firmly for 10-15 seconds to create a crust. Season with salt and pepper, then flip after 1.5 minutes. Top each patty with a scoop of pimento cheese and spread it to melt. Add the cooked peppers and onions, and cook for an additional minute. Double-stack the patties.
Toast the buns, mayo-side down, until golden. Assemble the burgers on a bed of arugula, and drizzle with honey if desired.
