Pork Chops with Apricot Glaze

Ingredients
- 3-4 thick-cut pork chops
- 1 tablespoon Blackstone SPG seasoning
- 1 teaspoon avocado oil
- 1/2 jar apricot preserves
- 1 tablespoon mustard
- 1 tablespoon rice wine vinegar
Directions
Season the pork chops with Blackstone S.P.G. seasoning and let them sit for 5 minutes. Preheat your Blackstone griddle to medium heat.
Add avocado oil to the griddle and spread it around. Place the pork chops on the griddle and cook for 2-3 minutes on one side.
While the pork chops are cooking, place a pan on the griddle and add the apricot preserves, mustard, and rice wine vinegar. Mix well to incorporate.
Flip the pork chops and continue cooking until they are fully cooked through.
Remove the pork chops from the griddle and place them on a plate or serving platter. Spoon the apricot sauce over the pork chops.
Serve and enjoy!
