Marinate the cut-up pork tenderloin in soy sauce, grated garlic, and both Blackstone seasonings for 20 minutes up to 24 hours.
Meanwhile, make the salsa by mixing all the salsa ingredients in a large bowl. Add jalapeno if you’d like it to be spicy. Mix mayo and sriracha in a small bowl, adjusting sriracha for more or less heat. Refrigerate both until ready to use.
Preheat the griddle to medium-high heat. Drizzle the griddle with oil, then add the marinated pork. Using spatulas, move the pork around to sear on each side until cooked through, about 5-10 minutes. Slide the pork aside or remove it and drizzle more oil to heat tortillas on both sides if using corn and on one side if using flour.
Serve family-style, allowing everyone to fill their own tacos with pork, salsa, and spicy mayo. Enjoy!
