In a mixing bowl, combine pancake mix, pumpkin puree, pumpkin pie spice, Snicker Doodle seasoning, milk, and mix thoroughly. If the batter is too thick, add more milk. Allow it to rest for 5 minutes.
Preheat your Blackstone griddle to low heat.
In a pan on the Blackstone, prepare the syrup by combining water and honey. Allow it to reduce until thickened.
Grease the griddle with butter and ladle pancake batter in approximately ½ cup increments for each pancake.
Cook each pancake for 2-3 minutes on each side or until a toothpick can be inserted and comes out clean.
Remove the pancakes from the griddle and top them with butter, followed by the homemade syrup.
