Queso Blanco Dip

  • 12 oz evaporated milk (NOT sweetened)
  • 3/4 lb white American cheese, deli sliced
  • 1/4 c fontina cheese, hand shredded 
  • 1/4 c mozzarella cheese, hand shredded
  • T tbsp green chili
  • 1/2 tbsp Blackstone Carne Asada seasoning


  • 1/2 lb ground chorizo (substitute beef or chicken)
  • 1/2 lb shrimp, diced (optional)
  • 1/2 c tomatoes, diced
  • Jalapeño peppers, cilantro 


  1. If adding meat or shrimp as a topping, begin to cook those on your griddle surface. See recipe video.
  2. In a shallow pan or small pot add evaporated milk. Set pan on griddle surface or side burner on low heat. 
  3. As soon as the milk begins to heat, steam or small bubbles, without overheating the milk begin to add the three cheeses in batches. Whisking until melted through before adding more cheese. You'll want to add the cheese in two or three batches until melted completely.
  4. Mix in the chili peppers and seasoning. 
  5. Top with the griddled meat and or shrimp.
  6. Garnish with jalapeño, tomatoes, and a post dusting!
  7. Serve with tortilla chips and enjoy!
