Rosemary Garlic Potatoes


  • 1 pound red potatoes, quartered
  • 8 large garlic cloves, smashed
  • 3 large sprigs rosemary
  • 2 tablespoons unsalted butter
  • Salt & pepper
  • Olive oil


  1. Heat your griddle to medium heat.
  2. In a large mixing bowl, add the potatoes, a pinch of salt and pepper and 1-2 tablespoons of olive oil. Toss to evenly incorporate ingredients.
  3. Add the potatoes to the griddle and cook for 4-5 minutes, tossing often. 
  4. Reduce the heat of your griddle to low and add the garlic and rosemary and toss to incorporate. Cover with a dome and cook for another 4-5 minutes. 
  5. Add the butter and toss all ingredients together. Cover with a dome and cook another 4-5 minutes. When the potatoes are fully cooked, remove and serve hot.
