Begin by boiling the baby potatoes until cooked through. This can be done a day prior for a quicker dinner.
Once the potatoes are ready, place them on a medium to medium-low heat griddle and drizzle them with olive oil to coat. Allow the potatoes to cook for 5 minutes to heat through.
Meanwhile, cook the sausages on the griddle until they are browned on each side, adding oil as needed to coat. Then, slice the sausages into rounds beside the potatoes.
Add the chopped peppers and onions to the griddle, drizzling with oil as needed to coat evenly. Toss the veggies to cook them. You can start this step once the potatoes and sausages are about 70% cooked.
Combine the veggies with the potatoes and sausages, allowing them to cook until the peppers and onions reach your desired level of tenderness.
Add the garlic during the last 5 minutes of cooking and season to taste with Blackstone Tuscan Herb or Tutto Italiano, salt, and pepper.
Plate the dish and serve with Italian rolls. Enjoy!
If you haven't precooked the potatoes, you can cook them on the griddle using a dome and some water to help them steam and cook through. Start cooking them first as they take the longest to cook.
