Ingredients
- 2 cups all-purpose flour
- 2 tablespoons sugar
- 1.5 teaspoons baking soda
- 1.5 teaspoons baking powder
- ½ teaspoon salt
- 2 large eggs
- 1.5 cups milk
- 2 teaspoons vanilla extract
- 1.5 tablespoons melted butter

- Fruit
- Powdered sugar
- Syrup

Directions
In a large mixing bowl, whisk together all the dry ingredients. Then, mix in the wet ingredients until well combined. Allow the batter to sit for 5-10 minutes. Meanwhile, preheat your Blackstone griddle to medium heat (375-400°F).
Swirl butter or oil onto the hot griddle and immediately pour the batter onto the griddle. Using a spatula, scramble the batter as it cooks, similar to scrambling eggs, creating bite-sized pieces of pancakes. Cook until the pieces are cooked through, adding more butter if needed for flavor and to help them brown.
Once cooked, plate the scrambled pancakes and top with fruit, chocolate chips, nuts, powdered sugar, and/or syrup. Enjoy!
