Ingredients
- 4 flour tortillas
- 4 eggs
- 1 cup of your favorite kind of freshly grated cheese
- 1 tablespoon of unsalted butter
- Salt and pepper to taste
- Optional: Favorite omelet ingredients
- 1 cup of diced ham
- 1/4 cup of diced green bell pepper
- 1/4 cup of diced red bell pepper
- 1/2 cup of diced onion
Denver Omelet Style:
Directions
Smashed egg tacos can be made with just cheese and egg, or you can add your favorite meat and veggies. For Denver omelet style, heat some oil on a griddle and cook the ham, peppers, and onions until they reach your desired level of doneness. Move them to low heat or remove them from the griddle and set them aside.
On a medium-low heated griddle, swirl some butter and crack one egg into the butter. Season with salt and pepper to taste.
Gently break the egg yolk and scramble it together. Immediately top the egg with shredded cheese and place a flour tortilla over the cheese and egg. Using a burger press or a large spatula, gently smash the tortilla in a circular motion to allow the egg to spread and reach the edges of the tortilla. Cook for 30 seconds, then flip the tortilla.
If desired, add veggies, meat, and a little extra cheese to one half of the tortilla, then fold it in half. Allow the tortillas to cook slowly and crisp on each side, or until lightly browned. The tortilla and eggs will fluff up as they cook slowly, so medium-low heat is best for this. Enjoy!

Recipe Note
Get creative with the meat and veggies you use to fill the egg tacos, although they are also delicious with just egg and cheese! You can dip them in sausage gravy, salsa, or ketchup for extra flavor.
