Ingredients
- 2 lbs. ground meat (pork, veal, beef blend)
- 1 egg
- 1 cup grated Parmesan cheese

2/3 cup panko breadcrumbs
- 1/4 cup chopped flat-leaf parsley
- 1 tablespoon Blackstone Tutto Italiano Seasoning (or to taste)
- 1 1/2 tablespoons extra virgin olive oil, plus extra for frying
- 4 garlic cloves, freshly grated
- 4 Ciabatta rolls
- 8 slices mozzarella cheese
- Pesto sauce
- Fresh basil
- 2 lbs. cherry tomatoes
- 4-6 whole fresh garlic cloves
- Blackstone Tutto Italiano Seasoning
- 3/4 cup extra virgin olive oil
- Fresh basil
- 1 stick unsalted butter
- 4 garlic cloves, freshly grated
- 2 teaspoons extra virgin olive oil
- 1/2 teaspoon sea salt
- 1 tablespoon chopped flat-leaf parsley

Garlic Herb Butter
Directions
Prepare the garlic herb butter by mixing all the ingredients together and set it aside.
In a cast iron skillet placed directly on your Blackstone Griddle surface, combine the cherry tomatoes, whole garlic cloves, Blackstone Tutto Italiano Seasoning, and fresh chopped basil. Season to taste. Cook the tomatoes low and slow until the garlic and tomatoes are softened and cooked down, stirring every 5 minutes. This process takes about twenty minutes. Remove once done.
In a large bowl, combine the ground meat blend, egg, breadcrumbs, grated garlic, cheese, seasoning, and parsley. Mix everything together by hand until well combined. Shape the mixture into 8 evenly sized meatballs.
Drizzle some oil on the griddle over medium-low heat. Place the meatballs on the griddle and allow them to cook until browned on all sides. Use a dome to ensure that the meatballs cook through.
Slice the Ciabatta rolls in half and spread garlic herb butter on both insides. Toast the rolls on the griddle until they turn golden brown.
Move the meatballs to one side of the griddle, behind the garlic butter, after toasting the rolls. Smash the meatballs to break them open. Place two slices of mozzarella cheese on top of the meatballs to melt.
Assemble the sandwiches by adding whole basil leaves, two meatballs, roasted tomatoes, and pesto sauce.
