Preheat Blackstone Griddle to low heat, and smoker to 350°F.
Place the bacon down on the hot griddle top. Turn each piece early and often until cooked through. Cut into large pieces and set aside.
Add pork chorizo to the side, stirring often while it cooks.
Then, add ingredients to a deep cast iron skillet or small dutch oven, to taste: Pork and beans, ketchup, mustard, molasses, salt, and pepper. Stir it well.
As the chorizo nears completion, add diced onions and jalapeno peppers.
When thoroughly cooked, add the chorizo mixture, bacon, and garlic paste to the skillet. Mix it all together. Mix in more ingredients as needed to get the desired taste.
Put the skillet in the smoker at 350°F for about an hour. Remove and enjoy!
