Prep the Spam by dicing it. Scramble the eggs in a small bowl. Chop green onions, separating the white and green parts. If using microwave rice, there is no need to heat it beforehand.
Preheat the griddle to 400°F. Add a light coating of oil and pour in the eggs. Cook gently for 2–3 minutes, then remove and set aside.
Add more oil to the griddle. Sauté the white parts of the green onions with garlic and ginger paste for 30 seconds, tossing constantly. Add rice and stir-fry until heated through. Drizzle with soy sauce and oyster sauce. Push rice to one side of the griddle.
Fry diced Spam for 1–2 minutes until lightly browned. Combine Spam with the rice. Add scrambled eggs, breaking them into small pieces and mixing evenly. Adjust seasoning with more soy sauce and oyster sauce if needed.
Drizzle with sesame oil and sprinkle with toasted sesame seeds and green onion greens. Serve and enjoy!
