Spicy Tomato Feta Bake

Ingredients
- 1 container cherry tomatoes
- 1 can chickpeas, rinsed and drained
- 2 tbsp chopped Calabrian tomatoes
- 2 tsp chopped garlic
- ¼ cup chopped roasted red peppers, plus 2 tsp oil from the jar
- 1 shallot, finely diced
- ¼ cup basil, chopped
- 2-3 tbsp olive oil
- Salt, pepper, and Tuscan Herb seasoning to taste
- 1 block feta cheese
- Prepared pasta of your choice (such as Cavatapi)
- Freshly grated Parmesan cheese
Directions
Preheat your pizza oven to 450˚F.
In a deep baking dish, combine cherry tomatoes, chickpeas, Calabrian tomatoes, garlic, roasted red peppers, shallot, basil, olive oil, and seasonings. Mix well and create a well in the center. Place the block of feta cheese in the well. Drizzle a small amount of olive oil over the feta and season with salt, pepper, and Tuscan Herb seasoning.
Bake in the preheated oven for 20 minutes or until the cherry tomatoes have burst open and the ingredients are nicely charred.
Remove from the oven and gently mix everything together. Add the cooked pasta to the baking dish and toss until all ingredients are evenly distributed.
Sprinkle freshly grated Parmesan cheese on top and serve hot. Enjoy!
