Spinach Omelette



  • 3/4 Cup of Whisked Eggs
  • 1.5 Cup of Fresh Spinach
  • 1 Tomato, Diced
  • 1/2 Purple Onion, Diced
  • 1/2 Avocado, Sliced
  • Shredded Cheese
  • Salt and Pepper
  • Sour Cream (optional)
  • Hot Sauce (optional)


  1. Turn griddle to medium heat, add a little oil or butter.

  2. Add the onions, season with salt and pepper. Add the fresh spinach and cook until slightly wilted.

  3. Set the spinach and onions aside. Spread a little more oil or butter on the griddle and slowly add the eggs.

  4. Use a spatula to shape the eggs into a round omelette shape and season with salt and pepper.

  5. Pour a little water around the omelette and cover with a basting dome to steam the top.

  6. Add cooked spinach and onions. Then, add 1/2 of your diced tomatoes and all of your shredded cheese to the omelette.

  7. Use the basting cover again to melt the cheese. Remove the cover, and fold the omelette in 1/2.

  8. Plate the omelette. Top with sliced avocado, add more diced tomatoes, sour cream, and some hot sauce.
