- 3/4 Cup of Whisked Eggs
- 1.5 Cup of Fresh Spinach
- 1 Tomato, Diced
- 1/2 Purple Onion, Diced
- 1/2 Avocado, Sliced
- Shredded Cheese
- Salt and Pepper
- Sour Cream (optional)
- Hot Sauce (optional)
Turn griddle to medium heat, add a little oil or butter.
Add the onions, season with salt and pepper. Add the fresh spinach and cook until slightly wilted.
Set the spinach and onions aside. Spread a little more oil or butter on the griddle and slowly add the eggs.
Use a spatula to shape the eggs into a round omelette shape and season with salt and pepper.
Pour a little water around the omelette and cover with a basting dome to steam the top.
Add cooked spinach and onions. Then, add 1/2 of your diced tomatoes and all of your shredded cheese to the omelette.
Use the basting cover again to melt the cheese. Remove the cover, and fold the omelette in 1/2.
Plate the omelette. Top with sliced avocado, add more diced tomatoes, sour cream, and some hot sauce.
