Steamed Ranch Carrots
Serves 2 Time: 15 minutes Difficulty: Easy
Ingredients
- 12 petite carrots
- 1 packet dry ranch dressing/seasoning mix
- 2 tablespoons extra-virgin olive oil
Directions
- In a large bowl, combine carrots, ranch seasoning mix, and olive oil. Stir until well-combined and all the carrots are coated evenly with oil and seasoning.
- Heat griddle to medium-high heat and cover evenly with a small amount of olive oil. Add carrots to the griddle and let cook for 2-3 minutes, turning occasionally.
- Add 2-3 Tbsp water to the pile of carrots to generate steam. Cover carrot pile with basting cover or similar metal dish.
- Every 2-3 minutes remove basting cover, toss carrots, add 2-3 Tbsp water, and re-cover with basting cover to continue steaming.
- Cook carrots for approximately 12 minutes or to desired tenderness.
