1 lb 80/20 ground beef
1 red onion, sliced into rings
3 shishito or jalapeño peppers, sliced
Cooking oil
Garlic paste or minced fresh garlic
Butter
3 brioche hamburger buns, buttered on the insides
Blackstone Pineapple Sriracha seasoning
6 slices colby or pepper jack cheese
3 pineapple slices
Sesame seeds (optional)
Mayonnaise
3 pieces green leaf lettuce
Teriyaki-style sauce (such as Mr. Yoshida’s or Bachan’s)
Sriracha sauce
Chopped cilantro
Preheat the Griddle: Set your Blackstone griddle to high heat.
Sauté the Peppers and Garlic: Drizzle some oil on the griddle and add the sliced peppers and garlic. Sauté until they soften, stirring occasionally.
Prepare the Beef Patties: Roll the ground beef into balls, each weighing 2.5-3 ounces. Drizzle additional oil on the griddle. Place each meatball on the griddle, cover with parchment paper, and flatten using a spatula or Blackstone Burger Press.
Season and Cook the Patties: Sprinkle Blackstone Pineapple Sriracha seasoning over the patties. Once the first side is well-seared, flip each patty and place a slice of cheese on top. Stack two patties together to make three double burgers.
Add Pepper-Garlic Mixture: Spoon the sautéed pepper and garlic mixture over each double burger.
Grill the Pineapple: Place the pineapple slices on the griddle, cooking both sides until they have a nice color. Add one slice on top of each double burger and sprinkle with sesame seeds if desired.
Toast the Buns: Place the buttered buns on the griddle, butter-side down, until golden brown. Spread mayonnaise on the bottom half of each toasted bun.
Assemble the Burgers: Add a piece of green leaf lettuce to each bun, followed by the double burger with pineapple. Drizzle with teriyaki sauce and Sriracha. Top with chopped cilantro, red onion rings, and finish with the top bun. Serve and enjoy!
